Mexican Pasta

I found this recipe while browsing through blogs and made some modifications to it. Adam and I are both mexican food lovers, but it is really hard to have a good mexican meal on our diet. It only took about 15 minutes to cook, and it is so good!!

 

Ingredients:

1lb lean ground beef or turkey

1/2 packet of taco seasoning

16oz jar of salsa (I used Medium Pace Picante Sauce)

1 can tomato sauce

1 1/2 cups of water

2 cups of wheat elbow macaroni or other wheat pasta

1 can of corn

1/2 cup of shredded cheese

 

Directions:

1. Brown the meat with taco seasoning

2. Add tomato sauce, salsa, & water. Heat until boiling.

3. Add pasta and corn. Reduce heat and cover to simmer for 15 minutes or until pasta is tender, stirring occasionally.

4. Serve with cheese sprinkled on top.

5. BE SATISFIED!! =]

Baked Oatmeal

I found the following recipe on sugarfreemom.com through pinterest. These muffins are great for an on the go breakfast and they are so filling!! I added my own notes in red. If you are on WeightWatchers, they are 3 Points+ each.

Ingredients

  • 2 eggs
  • 2 cups applesauce, unsweetened
  • 5 cups, Old Fashioned rolled oats
  • 1 banana, mashed
  • 2 3/4 cups milk (I use nonfat)
  • 1/4 cup flaxseed meal
  • 6 packets of Sweetleaf Stevia or 1 1/2 teaspoons stevia powder (I used Truvia)
  • 1 tablespoon ground cinnamon (I use 2 Tbs)
  • 3 teaspoon baking powder
  • 1 teaspoon vanilla extract (I use 2 tsp)
  • 1 teaspoon salt
  • Optional toppings: raisins, walnuts, chocolate chips

Directions

  1. Preheat oven to 350 degrees.
  2. Mix eggs, vanilla, applesauce, banana and Stevia together in a bowl.
  3. Add in oats, salt, baking powder, flax and cinnamon and mix well with wet ingredients.
  4. Finally pour in milk and combine.
  5. Spray a 12 and 6 capacity muffin tin with cooking spray or use cupcake liners.
    Pour mixture evenly into muffin tin cups. (Recipe says it makes 18 muffins, but mine always comes out with 24)
  6. If using toppings add them onto the tops of muffins now. If using fresh or frozen fruit, drop it right into the batter.
  7. Bake 30 minutes until a toothpick in center comes out clean. Cool and enjoy or freeze them in gallon freezer bags.

Date Night on a budget!!

Despite the massive lower back pain that hit me hard on Friday, I actually had a really awesome weekend. My hubby finally had a saturday off with me… the first in quite some time now. Saturday morning, we got to sleep in because little man went to sleep late the night before. Then we got to Skype with my sister and her family in Georgia for a while. After that, Adam and I had a date day (way cooler than date night if you ask me).

The table leaders at our marriage bible study (Fuse) gave us a challenge a few weeks back. Each person was supposed to plan a surprise date for their spouse, and it had to be under $25. We have until the end of this month to complete the challenge. At the end of the month, we will all tell about our dates and the person with the best idea will win a prize. Since Adam had a Saturday off, he had a plan for the day. Unfortunately, because I hurt my back he had to completely change his plans for the day. So, the day became very spontaneous. After our Skype session with my family, we grabbed some Cuties (clementines), and loaded up the car and headed out on our date. See our events in order

Total cost for a super fun date day: $22.90

Overall, I think my hubby’s spontaneous date day should get a 10/10. It was really fun looking for “new” treasures, and dreaming about the future home we will buy. Thumbs up to my hubby for staying on budget!! Now its my turn to plan a date!

Becoming a healthy woman

When Adam and I started dating, I was 18 years old. Like many 18 year olds, I was very insecure about my weight. I never thought that 5 years later I would be striving to be that size again! It has been 12 weeks since my little man, Caleb, was born! Those 12 weeks just flew right by! Unfortunately, I only lost 1/2 of my pregnancy weight in that time and I was already overweight to begin with. So now it is time to become a healthy momma! Adam and I have started weight watchers together as of yesterday! More

Proverbs 31 Woman

Today I have begun to take a look at my life and have though heavily about who I want to be. I want to give my husband a reason to love me, and I want to feel worthy of his love. I have a lot of changes to make and I know the best place to start is my relationship with God. Today I am praying that God will lead me to become a Proverbs 31 woman and teach me what that really means.
